I had been using the Activia but decided to buy a tub of <a href="http://www.dannon.com/ourproducts.aspx">Dannon All Natural Vanilla </a>and think I have a new fav. An easy lunch to take to work, the yogurt goes in the bowl first then I add some frozen blueberries. In a separate Glad container I&#8217;ll put a 1/2 cup of <a href="http://www.etsy.com/view_listing.php?listing_id=41475833">Everything Granola</a>. By the time I&#8217;m ready for lunch the blueberries are softened. In goes the granola&#8230;a quick &amp; easy, healthy lunch.</p>

<p>On my &#8220;to-do&#8221; list has been to do a nutritional calculation on the granola from my <a href="http://www.etsy.com/shop/earlybirdcafe">earlybirdcafe</a>. It&#8217;s been pushed aside until this weekend when someone asked the info. Thanks Laura for helping me get that item crossed off the list!!!  How do I figure out the nutrition? There are a number of nutrition calculators on the web. I&#8217;ve been using the one from <a href="http://recipes.sparkpeople.com/recipe-calculator.asp">SparkPeople.com</a> for these.   Here&#8217;s the highlights of the analysis.</p>

			<content:encoded><![CDATA[<p>It&#8217;s been one month since I started selling in my new shop, <a href="http://www.etsy.com/shop/earlybirdcafe">earlybirdcafe.etsy.com</a>.  Last week I was one of a dozen other women who participated in a Networking Open House.  All of us had various businesses, everything from dog walking, to jewelry, handbags to monogramming, custom window designs, a day spa and cooking classes.  Paula Wardlaw opened her beautiful home for us all.  She has her own line of products, <a href="http://www.pjoliecosmetics.com">p. jolie cosmetics </a>and is an awesome make-up artist. </p>

<p>I found these place card holders at Hobby Lobby for labeling the various samples.  They also had some great bags and boxes  for packaging.  It was great to meet all the other women who are also working  on growing their businesses!  Thanks Laurel for the invite and Paula, for putting this all together!!!</p>

<p>So far in this first month I&#8217;ve had 20 on-line sells plus some other sales at the open house and to others, averaging close to a sale a day.  Not too bad&#8230;hoping to see this continue to grow!  Thanks to Sara, for the packaging, labels and other design help!  Thanks to the Giessens and others who continue to offer me great feedback  and encouragement, my loyal taste testers.</p>
<p>The number one seller has been the <a href="http://www.etsy.com/view_listing.php?listing_id=40317926">Fig and Walnut Energy Bars</a>, a close second is the <a href="http://www.etsy.com/view_listing.php?listing_id=40502794">Everything Granola</a>.  Tied for 3rd place is the <a href="http://www.etsy.com/view_listing.php?listing_id=39892274">Nutty Granola Mix </a>and the <a href="http://www.etsy.com/view_listing.php?listing_id=39964664">Cherry Pecan Biscotti</a>.  The <a href="http://www.etsy.com/view_listing.php?listing_id=40065996">Apricot, Date and Almond Energy Bars</a> are a fairly new addition, similiar to the Fig and Walnut bars but sweetened with maple syrup, finished 4th.  I also had a recent special order for Gingerbread from one of my regular customers, a gift for someone.  Whether it&#8217;s a food item from the Early Bird Cafe or an item from my other shop, I <strong><em>love</em></strong> knowing that something purchased from me is a gift for someone special.   </p>

<h4> Mix first 6 ingredients.  Mix sour cream and mayonnaise.  Toss all together till well mixed.  Sprinkle with almonds.  May be served in cream puffs or croissants and placed on lettuce leaves with cherry tomatoes.</h4>
<h5 style="text-align: center;"> A delicious salad for a lunch or light dinner.  Try using grilled chicken for a wonderful variation!</h5>

<p style="text-align: left;">This recipe goes into the &#8220;Family Favorite&#8221; category!  To prepare the cooked chicken I use chicken breast that are the bone-in.  In a large stock pot place washed chicken breasts, add celery stalks, a large onion,  quarted garlic cloves, season with salt and pepper, additional seasonings such as garlic powder, celery salt.  Add just enough water to barely cover, put on your lid then bring to a simmer, reduce tempurature to low, cook another 15-20 minutes.  Turn off the heat and let the pot sit until cool enough to handle.  I prefer to hand shred the meat.  Strain and save the excellent the broth for soups or other recipes.  If you don&#8217;t have time to cook your own meat, a rotiesserie chicken works well, grilled chicken is also delicious and adds another flavor dimention.  I didn&#8217;t put seasonings amounts because I don&#8217;t really measure, but season to taste with the Spice Island blend,  &#8221;Beau Monde&#8221; seasoning, pepper. </p>

<p>My latest endeavor, <a href="http://www.etsy.com/shop/earlybirdcafe">EarlyBirdCafe.etsy.com </a>is off to a great start!  My first sale was the <a href="http://www.etsy.com/view_listing.php?listing_id=38838836">Everything Granola </a>and the <a href="http://www.etsy.com/view_listing.php?ref=vl_other_2&amp;listing_id=39072530">Fig &amp; Walnut Energy Bars</a> to Paula in Maine.  She has ordered more granola for a friend and more bars for herself!  Oh, how that made my day!  Tonight I&#8217;ve made another batch of granola that will go to the other side of the country, to Shea in Oregon.   Thank you to my new customers and to my (graphic) designer kids for the great design work in my shops and webpages!</p>

<h1>Chicken Piccata</h1>
<h2>INGREDIENTS:</h2>
<h3>4 chicken breasts, skinned and de-boned*</h3>

<h3>3/4 C Vermoth or a dry white wine</h3>
<h3>1 lemon, juiced</h3>
<h3>INSTRUCTIONS:</h3>
<h4>Beat egg with 1 T lemon juice.  Combine flour and spices.  Dip chicken in egg mixture, then in the flour mixture.  Brown chicken in a skillet with melted butter.  Dissolve bouillon in water; add remaining 2 T lemon juice.  Pour into the skillet with the chicken.  Cover and simmer on low for 20 minutes.</h4>
<p>Kroger had Tyson boneless, skinless breasts on sale for $1.79 lb!  So, chicken was on the menu for this evening!  When I went to get a bouillon cube the only one I had was beef so I turned to a bottle of Vermoth (or a white wine), added some more lemon to the mix.  Add chopped garlic or more garlic powder, if you like.  Capers are also traditionally added to this dish so throw some in if you desire!  Use this basic technique &amp; make it your way.</p>
<p> *For more even cooking and I do tenderize using my rolling pin with the filets between 2 pieces of wax paper.</p>

<p>The rooster who free ranged down the street I found, captured and return to his owner.  We&#8217;ll miss their chattery clucking, the scratching about their yard.  Their new home in Alpharetta is amazing and I know that they will be loved, spoiled and cared for just like they were here!  We&#8217;ll miss our girls!!!</p>

<h3 style="text-align: center;">1/2 cup margarine</h3>
<h3 style="text-align: center;">1 1/4 cups finely crushed pretzels</h3>
<h3 style="text-align: center;">1/4 cup brown sugar</h3>
<h3 style="text-align: center;">14 oz. Eagle brand sweetened condensed milk</h3>
<h3 style="text-align: center;">1/3 cup lime juice</h3>
<h3 style="text-align: center;">2-4 Tbls. tequilla</h3>
<h3 style="text-align: center;">2 Tbls. Triple Sec</h3>
<h3 style="text-align: center;">1 cup whipped cream</h3>

<h2 style="text-align: center;">INSTRUCTIONS:</h2>
<h3 style="text-align: center;">Melt margarine in a small saucepan. Stir in pretzel crumbs and sugar. Mix well.</h3>
<h3 style="text-align: center;">Press crumbs on bottom and sides of a buttered 9 inch pie pan.  Bake in oven at 375 degress for about 10 minutes.  Cool completely before filling.</h3>
<h3 style="text-align: center;">In large bowl combine milk, lime juice, tequilla, and Triple Sec. Mix well. Fold in whipped cream. Pour into prepared crust.</h3>

<p style="text-align: center;"><span style="font-size: x-small; font-family: Arial;">Freeze or chill until firm for 2 hours in freezer or 4 hours in fridge. Refrigerate or freeze leftovers( if there are any)!</span></p>

<h3 style="text-align: left;">Tabasco sauce</h3>
<h3 style="text-align: left;">1 C beef broth</h3>
<h3 style="text-align: left;">1 C red wine</h3>
<h3 style="text-align: left;">½ lb mushrooms</h3>
<h2 style="text-align: left;">INSTRUCTIONS:</h2>
<h4>Sauté onions in bacon drippings or oil then remove the onions.  Sauté beef cubes in the same drippings.  When beef is slightly browned, sprinkle the flour over the meat; add hot sauce, salt, pepper and any other spices to taste.  Pour beef broth and wine over the meat.  Stir well, cover and simmer very slowly for about 3 hours.  If juices begin to simmer away, add more as needed.  After meat has simmered, return onions and add the mushrooms.  Serve over rice or noodles.</h4>

<h3>3 pounds of apples, peeled and chopped<br />
1 teaspoon cornstarch<br />
additional sugar &amp; spices, if desired<br />
2 teaspoons lemon juice<br />
1 teaspoon vanilla, optional</h3>

<h3>1/2 cup flour<br />
1/2 cup chopped pecans<br />
1/3 cup brown sugar<br />
4 Tablespoons granulated sugar<br />
1 teaspoon cinnamon<br />
1/2 teaspoon apple pie spice<br />
1/2 cup oatmeal<br />
dash of salt<br />
6 Tablespoons melted or softened butter</h3>
<h2>Instructions:</h2>
<h4>Preheat oven to 350 degrees. Spray baking dish with no-stick spray. Sprinkle corn starch, additional sugar and spices over chopped apples. Add lemon juice, vanilla, if desired. Toss. Spread the coated apples into prepared baking dish. Bake for about 20 minutes.</h4>
<h4>While apples begin to cook in the oven, prepare the topping. Combine chopped pecans, dry ingredients, spices and oatmeal. Add the softened or melted butter and mix. When apples have baked the first 20 minutes, remove from oven and crumble the topping mixture evenly over the apples. Return to the oven for another 20-25 minutes or until crisp topping begins to brown. Remove from the oven and allow to cool about 15 minutes before serving.</h4>
